Ingredients
- 4 cups of unpeeled organic potatoes, cut into cubes
- 1 cup of filtered water
- 1 bunch of fresh spinach
- 2 cups of almond milk
- 1 cup of chopped parsley
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon vegetable broth powder- optional
- 2 tablespoons of organic tamari sauce
- 1 onion, chopped
- 1 teaspoon paprika
- 1 teaspoon basil
- Celtic Sea Salt
- Black Pepper
- 1 teaspoon of marjoram
- 1 clove of garlic, minced
- Extra parsley for garnish
Instructions
- Rinse the potato. Bring to a boil and cook the potato until tender. When tender, add the spinach leaves and continue cooking for 10 more minutes.
- Blend the vegetables and any remaining cooking water with all the other ingredients except the parsley.
- Put the blended soup mixture in a medium saucepan and stir in the parsley.
- Bring the mixture to a boil then let simmer for 10 minutes. Add seasoning.
- Serve garnished with extra parsley and onion on top.
